Blueberries Muffin with Nuts

藍莓腰果瑪芬蛋糕

簡單快速的Muffin 
適合當大人或小寶貝的下午茶

#此分量可製作約7份
材料:
雞蛋 2顆
自發麵粉 170g
融化無鹽奶油 100g
牛奶 100g
細砂糖 100g (可減少)
新鮮藍莓 & 腰果碎 100g 
無鋁泡打粉 1.5g 
香草精 1/2茶匙 (可免)

1)把雞蛋,已融化奶油,牛奶和糖放入大碗內,用打蛋器攪拌均勻
2)加入香草精和過篩的麵粉和泡打粉,拌勻
3)加入藍莓和腰果碎,拌勻
4)將麵糊倒入muffin 烤盤內 (至少90%滿)
5)將烤盤送入已預熱好的烤箱,烤175度,30分鐘即可享用

Egg 2 pcs
Self-raising flour 170g
Melted unsalted butter 100g
Milk 100g
Caster sugar 100g (may reduced)
Fresh blueberries & nuts 100g
Aluminium free baking powder 1.5g
Vanilla Essence 1/2 tsp (optional)

1) In a mixing bowl, add eggs, melted butter, milk and sugar. Mix and combined with hand whisk.
2) Add in vanilla essence and sifted flour/baking powder, use a hand whisk to whisk until well combined.
3) Add in blueberries and nuts, mix well.
4) Pour the batter into cupcake/muffin bake tray until 90% full 
5) Send the bake tray into preheated oven, bake at 175 degree, 30 mins and ready to serve
