香菇雞肉菠菜粥

Chicken Porridge with Mushroom & Baby Spinach


今日午餐 - 香菇雞肉菠菜粥

#適合一歲以上

材料:
雞肉 Chicken Meat
麻油 Sesame Oil
自製大蒜粉 Homemade Garlic Powder
自製雞粉  Homemade Chicken Stock Powder
自製香菇粉 Homemade Mushroom Powder
雞蛋 Egg
鮮香菇 Shitake Mushroom
菠菜 Baby Spinach
蒜頭 4辦 Garlic 4 cloves
薑片 2片 Sliced Ginger 2 pcs
生米 1/2杯 Raw Rice 1/2 Cup
去籽紅棗 5粒 Seedless Red Dates 5 pcs
自製雞高湯 1litre Homemade Chicken Soup Stock
橄欖油 Olive Oil

1)雞肉跟麻油,大蒜粉,雞粉和香菇粉拌勻後,加入蛋液攪拌均勻,醃製至少30分鐘 (沒有自製粉可以直接切蒜米代替)
Marinate the chicken with sesame oil, garlic powder, chicken stock powder, mushroom powder and egg for at least 30 mins (If you do not have homemade powder, you may wish to replace with minced garlic)

2)熱鍋,倒入少許橄欖油,爆香蒜頭和薑片,加入醃製好的雞肉翻炒至泛白,再加入鮮香菇翻炒一下
Heat fry pan, add olive oil, saute garlic and ginger, add marinated chicken and stir fry until semi-cooked, add shitake mushroom and stir fry for a while

3)加入生米翻炒至水份收干後即可倒入飯鍋內,加入雞高湯/水和去籽紅棗
Add raw rice, stir fry them until dry, transfer all the ingredients into rice cooker. Add chicken soup stock/water and seedless red dates into rice cooker

4)飯鍋按ON,待粥煮好後,加入菠菜再燜約5分鐘即可享用
Press ON, once the porridge done, add baby spinach, simmer for 5 mins and ready to serve

今天侒侒26個月咯 🎉
最近覺得他好像突然長大很多
心裡有點小感觸
突然很想念那個米其林侒侒 😂

今天的午餐是久違的粥
其實媽咪我是不知道要煮什麼
因為他最近很多東西都不肯吃
看看冰箱有雞肉,雞高湯就決定煮粥了

雞肉用麻油,自製大蒜粉和雞粉醃一下
再加入雞蛋拌勻,目的是要讓雞肉的肉質更柔軟些
所有材料都先拌炒過再用電飯鍋來煲粥
加了一點自製蘑菇粉和雞粉來調味
當然也因為雞高湯的關係
粥很香甜 也不用再另外調味了
我自己就磕掉2碗
但是侒侒就只是吃一點點 😭
果然沒有蒸蛋配飯 他真的都不肯吃了
