"Fake Hotplate" Tofu


今日晚餐 - 沒有鐵板的 鐵板豆腐 😅

#適合一歲以上

材料:

蛋豆腐 Egg Tofu
香菇 Dried Mushroom
香菇水 Mushroom Water
雞蛋 Egg
蒜米 Minced Garlic
薑茸 Minced Ginger
紅洋蔥 Red Spring Onion
豬肉碎 Minced Pork
自製蒜米粉 Homemade Garlic Powder
自製香菇粉 Homemade Mushroom Powder
甜紅椒粉 Paprika Powder
黃薑粉 Turmeric Powder
橄欖油 Olive Oil

1)豬肉碎和雞蛋,自製蒜米粉,自製香菇粉,甜紅椒粉和黃薑粉拌勻後,放入冰箱冷藏至少1小時;泡軟香菇切片,香菇水留著
Mix and combine the minced pork with egg, homemade garlic powder, homemade mushroom powder, paprika powder and turmeric powder, put in fridge and marinate for at least 1 hour; soak the mushroom until tender, cut into slices, keep the mushroom water

2)熱鍋,倒入少許橄欖油,加入蛋液,煎蛋至表面凝固,放到盤裡備用
Heat pan, pour a little bit of olive oil, add beaten egg, fry the egg until surface cooked, transfer to plate and set aside

3)蛋豆腐切片後,加入適量的橄欖油,用中小火煎至兩面金黃色,起鍋備用
Cut the egg tofu into pieces, add some olive oil into fry pan, fry the egg tofu with medium low heat until both side golden, and set aside

4)用回同一鍋,加入醃製好的豬肉碎翻炒至泛白,加入紅洋蔥,薑茸和蒜米翻炒至有香味
With the same pan, add marinated minced pork stir fry until semi-cooked, add red onion, minced ginger and minced garlic, stir fry until fragrant

5)加入香菇翻炒一下,再加入煎好的蛋豆腐和香菇水,蓋鍋,轉中小火燜5分鐘即可熄火
Add mushroom and stir fry for a while, add fried egg tofu and mushroom water. Cover the pan, switch to medium low heat and simmer for 5 mins, switch off the heat

6)把所有材料倒在煎蛋上即可享用
Put all the ingredients on fried egg and ready to serve

最近侒侒的口味有些變化
以往不吃的東西開始吃了
(媽咪我心裡在放鞭炮了🎉)
前幾天做了幾個蛋豆腐給侒侒試吃
很意外的他吃完了還要再吃
所以今天就做沒有鐵板的鐵板豆腐給侒侒吃
媽咪我很喜歡的一道料理 😄
這一堆豆腐侒侒吃到剩下2個給我們大人吃 😑

煎蛋至表面凝固,放到盤裡備用
Fry egg until surface cooked,
transfer the egg to plate and set aside

蛋豆腐煎至兩面金黃色
Fry the egg tofu until both side
golden

翻炒豬肉碎至泛白
Stir fry the minced pork until
semi-cooked

加入洋蔥,薑茸和蒜米翻炒至有香味
Add red onion, minced ginger &
minced garlic, stir fry until fragrant

加入香菇翻炒一下
Add mushroom and stir fry for a while

加入煎好的蛋豆腐和香菇水,
蓋鍋,中小火燜5分鐘
Add fried egg tofu and mushroom water,
cover the pan, switch to medium low heat,
simmer for 3~5 mins
