迷你海綿蛋糕 (不粘鍋版)

Mini Sponge Cake (by Non-Stick Pan)


今日早餐 - 迷你海綿蛋糕 (不粘鍋版)

材料:
雞蛋 2粒
有機蔗糖 25g
低筋麵粉 60g
融化無鹽奶油 15g

1)慕斯圈抹油,套入一層烘培紙 (我沒有慕斯圈,用脫底蛋糕模代替)
2)將雞蛋打至有泡泡狀,加入糖用電動打蛋器打至濕性發泡 (打蛋器拿起不滴落)
3)加入融化無鹽奶油和篩過的麵粉,用刮刀輕輕拌勻
4)快速混合,攪拌至無粉粒的麵糊
5)把模具放入不粘鍋內小火加熱
6)把麵糊慢慢倒入模具中
7)蓋上錫紙或鍋蓋
8)麵糊表面冒泡泡後,把模具和烘培紙移開;翻面,蓋上鍋蓋再燜2~3分鐘即可

Ingredients:
Egg 2 pcs
Organic Cane Sugar 25g
Cake Flour 60g
Melted Unsalted Butter 15g


1) Brush a layer of oil on mousse ring, place a piece of baking paper in mousse ring (I don't have mousse ring, so i replace with springform cake mold) 
2) Whisk the egg until foamy, add sugar and whisk until soft peak
3) Mix and combine the mixture with melted unsalted butter and sifted flour, until become smooth batter
4) Place the mousse ring into pan, heat with low heat
5) Pour the batter into mousse ring slowly, cover the pan with lid or with aluminium foil tape
6) Remove the mousse ring and baking paper once the surface of batter popping bubbles
7) Flip it, cover the pan and simmer for 2~3 mins and done

自上回烤焦的海綿蛋糕後
這次我學乖了
用超小火,但是這次卻因為要應酬侒侒
忘了時間,結果還是表層還是燒焦了 😢
因為麵糊多,所以要煎超久的

我用脫底蛋糕模幫助蛋糕長高高
剩下多餘的拿來當煎餅 😏
蛋糕裡面軟軟的好好吃哦




全蛋打至泡沫加入糖
Whole egg whisk until foamy,
add sugar

用高速攪打至濕性發泡
Whisk with high speed until
soft peak

加入融化無鹽奶油和篩入麵粉
Add melted unsalted butter and
sifted flour

用切拌式拌勻至無顆粒狀態
Mix well with spatula 

倒入蛋糕模,用小小火煎
Pour the batter into mould, fry with super low heat

用錫紙蓋住,或用鍋蓋蓋起來
Cover with aluminium foil tape, or cover the pan

表面凝固後,移開模型
Remove the mousse ring and baking paper
once the surface of batter popping bubbles

快速翻面(對不起燒焦了)
再煎2~3分鐘即可
Flip the cake quickly, fry another
2~3 mins and done
