親子丼 (雞肉蓋飯)

今日晚餐 - 親子丼 (雞肉蓋飯)

材料:
雞腿肉 Chicken Leg Meat
黃洋蔥 Brown Onion
胡蘿蔔絲 Sliced Carrot
水/高湯 Water/Soup Stock
自製香菇粉 Homemade Mushroom Powder
黑胡椒粉 Black Pepper Powder
太白粉 Potato Starch
雞蛋 Egg

1)雞腿肉跟香菇粉,黑胡椒粉和太白粉醃製至少1小時;雞蛋打散備用
Marinate the chicken with mushroom powder, black pepper powder and potato starch for at least 1 hour; whisk egg and set aside

2)熱鍋,轉中小火,加入無鹽奶油待融化,加入雞肉翻炒至泛白
Heat fry pan, switch to medium-low heat, add unsalted butter and wait until dissolved, add chicken, stir fry until semi-cooked

3)加入洋蔥和胡蘿蔔絲翻炒至有香味
Add brown onion and sliced carrot, stir fry them until fragrant

4)加水/高湯淹過食材,加入1茶匙的香菇粉拌勻
Add water/soup to cover the ingredients, add 1 tsp of mushroom powder, mix well

5)轉小火,蓋鍋燜至差不多收汁,把蛋液倒進去,熄火蓋鍋燜至蛋液熟透即可
Switch to low heat, cover the pan and simmer until the sauce almost dry. Pour the beaten egg into pan, switch off the heat, cover the pan and simmer until the egg cooked.

6)把食材放到白飯上即可享用
Put the ingredients on rice and ready to serve

加水/高湯淹過食材
Add water/soup stock,
cover the ingredients

小火燜至差不多收汁
Simmer the chicken with low heat
until almost dry

雞蛋打散
Whisk egg

倒入蛋液
Pour the egg into pan

熄火蓋鍋燜至雞蛋熟透
Switch off the heat, cover the pan,
simmer until the egg cooked
