平底鍋烤薯泥麵包 (免揉免發酵)

Mashed Potato Bun by Non-Stick Pan


今日午餐 - 平底鍋烤薯泥麵包 (免揉免發酵)

以下材料可製作4粒麵包

內餡材料:
馬鈴薯 1粒
鮮奶 3~4湯匙
自製香菇粉 1茶匙

麵包皮材料
高筋麵粉 60g
低筋麵粉 40g
泡打粉 2g
鮮奶 70ml
橄欖油 6g
細砂糖 6g
鹽 1咪咪
黑芝麻粉 1湯匙

1)馬鈴薯蒸熟壓爛,加入鮮奶和香菇粉攪拌均勻至順滑,備用
2)準備一個大碗,把所有粉類過篩,把所有材料放入碗內 (除了薯泥),用刮刀攪拌均勻 (麵團會黏黏的)
3)蓋上濕布醒面10~15分鐘
4)撒些麵粉在桌上,把麵團取出放在上面
5)把麵團分成4等份,用手掌壓平麵團 (麵團太黏手就撒點麵粉)
6)把適量的薯泥放在麵團上,包起來,收口處捏緊,整形好收口處朝下放入不粘鍋
7)蓋上鍋蓋用最小火烘烤5~8分鐘
8)兩面均烤上色即可

The following ingredients can made 4 buns

Ingredients for filling:
Potato 1 pc
Fresh Milk 3~4 tbsp
Homemade Mushroom Powder 1 tsp

Ingredients for dough:
Bread flour 60g
Hong Kong flour 40g
Baking Powder 2g
Fresh Milk 70ml
Olive Oil 6g
Caster Sugar 6g
A pinch of Salt
Black Sesame Powder 1 tbsp

1) Steam and mashed potato, add fresh milk and mushroom powder, mix until smooth texture, set aside
2) Prepare a big bowl, sieved all the flour/powder, put all the ingredients into bowl (except mashed potato), mix well with spatula (the dough will be quite sticky)
3) Cover the dough with a damp cloth for 10~15 mins
4) Sprinkle some flour on the table, transfer the dough from dough to table
5) Cut the dough into 4 pieces, flatten the dough with palm (Sprinkle some flour on dough due to sticky)
6) Scoop some mashed potato on dough, wrap it, and place them on non-stick pan
7) Cover the pan and cook with low heat for 5~8 mins
8) Until both side golden and ready to serve

這款麵包不用發酵不用揉真的很簡單
熟練的話應該很快就會做好
我是第一次就慢點 😅
收口也不是收得很漂亮
不過麵包真的很好吃!
