Salmon Fish Patties


今日午餐 - 三文魚餅

材料:
洋蔥 Spring Onion
三文魚 Salmon
馬鈴薯 Potato
胡蘿蔔 Carrot
花椰菜 Broccoli
中筋麵粉 Plain Flour
蛋黃 Egg Yolk
麵包糠 Bread Crumbs
自製香菇粉 Homemade Mushroom Powder
甜紅椒粉 Paprika Powder
黑胡椒粉 Black Pepper Powder
橄欖油 Olive Oil

1) 洋蔥切丁,跟三文魚一起蒸熟壓碎;馬鈴薯蒸熟壓爛,胡蘿蔔刨絲可以跟馬鈴薯一起蒸,花椰菜切碎蒸5分鐘
Chopped spring onion and steam with salmon, mashed salmon once cooked; Steam and mashed potato, sliced carrot and steam with potato, chopped broccoli and steam for 5 mins

2)把洋蔥丁,三文魚,馬鈴薯泥,胡蘿蔔和花椰菜攪拌均勻,加入適量的香菇粉,甜紅椒粉和黑胡椒粉拌勻
Mix and combine the mashed potato, carrot and broccoli. Sprinkle some mushroom powder, paprika powder and black pepper powder mix well. 

3)加入1湯匙的麵粉攪拌均勻,倒入蛋黃拌勻
Add 1 tbsp of plain flour, mix well; pour the egg yolk into bowl and mix well

4)用湯匙舀一匙起來,撒上麵包糠;再放到手上,替另一邊撒上麵包糠
Scoop a mixture, sprinkle the bread crumbs on it; place the mixture on your palm, sprinkle the bread crumbs on the other side

5)熱鍋,刷一層橄欖油,轉小火,把三文魚餅放至鍋內,煎至兩面金黃色即可
Heat pan, brush a layer of olive oil, switch to low heat, place the salmon cake into fry pan, fry until both side golden and ready to serve

 ** 小撇步:在第三步驟準備好後,放入冰箱冷藏30~40分鐘,再捏成圓形會比較容易。我是因為趕時間,就跳掉放入冰箱這步驟
** P/S: Once the step 3 done, you can put the mixture into the fridge for 30~40 mins, this will be easier to shape it. For me, i skip this step because i'm rushing hour =.= 

** 另外,一定要小火煎至全熟,我煎好之後發現裡面濕濕的,基於心理因素,我又拿去蒸5分鐘 XD
** Side Note: Only use low heat throughout the whole process. Personally, I steamed for additional 5 min.

加入香料拌勻

加入1湯匙麵粉拌勻

倒入蛋黃拌勻


舀1湯匙起來,撒上麵包糠

放到手上,替另一邊撒上麵包糠



小火煎

完成
