Mushroom Minced Pork Rice (baby version)


今日午餐 - 香菇肉燥飯 (小人版)

材料:(食材比例請根據肉碎的份量來自行拿捏)
麻油
太白粉
豬肉碎 
香菇
水煮蛋 (可免)
红葱头
冰糖
水/高湯
香菇粉
橄榄油

1)猪肉碎跟太白粉,麻油和香菇粉腌制至少30分钟 (越久越好)
2)水煮蛋切半备用,蒜和红葱头切碎备用,香菇泡軟切丁,香菇水留著
3)熱鍋,轉中小火,加入少許橄欖油,蒜米和紅蔥翻炒至金黃色
4)加入豬肉碎翻炒至泛白,用鍋鏟稍微壓碎弄散
5)加入香菇丁和泡香菇的水,再加入約一碗的水/高湯(蓋過食材),翻炒均勻
6)蓋鍋,待水滾後,加入適量的香菇粉和冰糖,拌勻,加入水煮蛋,再蓋鍋
7)燜大約10~15分鐘即可

** 不用燜到水干,留點汁會比較可口
** 出鍋前可以先試味道,如果覺得味道不夠的話可以再加一點香菇粉調味
** 如果使用高湯,味道足夠的話,是不需要用香菇粉調味的,台灣肉燥飯的主角是蒜,紅蔥頭和冰糖。當然大人版還要有醬油才是完整。不過寶寶版當然不能有醬油咯

Ingredients: (The proportion of the ingredients according to the quantity of minced pork)

Sesame Oil
Potato Starch
Minced Pork
Dry Mushroom
Hard-boiled Egg (Optional)
Garlic
Red Onion
Rock Sugar
Water/Soup Stock
Mushroom Powder
Olive Oil

1) Marinate the minced pork with sesame oil, potato starch and mushroom powder for at least 30 mins (the longer the better) 
2) Cut the hard-boiled egg into half, set aside; chopped garlic and red onion, set aside; soak the dry mushroom until tender, cut into small pieces, keep the water which soak mushroom and set aside
3) Heat pan, switch to medium-low heat, add a bit of olive oil, garlic and red onion, stir fry them until fragrant and golden
4) Add minced pork and stir fry till semi-cooked, mashed the minced pork with spatula while stir-frying
5) Add mushroom dice and mushroom water, add a bowl of water/soup stock (at least cover the ingredients), stir and mix well
6) Cover the pot, once water boiling, add a moderate amount of mushroom powder and rock sugar, mix well, add hard-boiled egg, cover the pot again
7) Simmer for 10~15 mins and ready to serve

** Keep some juice, taste better. So don't need to stew until water dry
** Taste before serve, you may wish to add some mushroom powder for seasoning if not enough tasty as you thought.
** If using soup stock instead of water, and taste enough, you don't need to add mushroom powder for seasoning. The main role for Taiwan style minced pork are garlic, red onion and rock sugar. For adult must add black sauce too. But of cos, little one don't need black sauce. 😅

我一直都和想念台灣的肉燥飯
記得西門町那一帶有一間賣的肉燥飯超好吃的
每次去台灣一定要去一下 哈哈
今天終於下定決心來挑戰這道佳餚
當然還是以寶寶版為主

雖然成果不像台灣正宗的肉燥飯那麼美味
但自己煮的,吃起來也不錯啦 (自賣自誇)
