Lemon Souffle Cheese Cake


今日茶点 - 柠檬舒芙蕾芝士蛋糕

蛋黄糊 Egg Yolk Mixture:
奶油芝士 Cream Cheese 125g
牛奶 Milk 50g
无盐奶油 Unsalted Butter 30g
柠檬汁 Lemon Juice 10ml
蛋黄 Egg Yolk 3 pcs
玉米粉 Corn Starch 10g
低筋面粉 Low Protein Flour 15g

蛋白霜 Meringue:
蛋白Egg White 3pcs
幼糖 Fine Sugar 45g

1) 将奶油芝士+牛奶隔水煮溶,熄火
Heat the cream cheese and milk until melted, switch off the heater

2) 柠檬汁,无盐奶油(隔热水融化),加入做法1,搅匀
Mix the lemon juice and melted unsalted butter into Step 1

3)蛋黄分三次加入,搅匀
Add the egg yolk separately into the mixture

4)加入过筛的玉米粉和低筋面粉,拌匀
Add the sieved corn starch and low protein flour, stir and combine

5)分两次将糖加入蛋白内,打发至湿性发泡
Add the sugar into egg white, beat until soft peaks

6)将1/3蛋白霜加入至蛋黄糊里,拌匀
Pour 1/3 meringue into the egg yolk mixture, stir and combine with spatula

7)将做法6分两次加入剩下的蛋白霜里,拌匀
Add the step 6 (separate to twice) into meringue

8)将完成的面糊倒入6寸模具里下
Pour the batter into 6 inch cake mould

9)放入预热烤箱里,底下放一盘热水,以蒸烘法180deg 10分钟,160 deg 40分钟即可
Place the cake mould into preheat oven, pour the hot water into lower tray. Use the steam method bake for 180 deg 10 mins, 160 deg 40 mins and ready to serve
