Homemade White Bread
自製白麵包
材料:
麵包粉 260g / Bread flour 260g
即溶酵母 3g / Instant Yeast 3g
雞蛋 1粒 / Egg 1 pc
牛奶 160~180g / Milk 160 ~ 180g
細砂糖 30g / Sugar 30g
鹽 2g / Salt 2g
無鹽奶油 30g / Unsalted Butter 30g
1) 所有食材(除了奶油)混合,和面並搓至拓展狀
Mix all ingredients (except butter) together and knead till you get a silky and elastic dough
2) 加入奶油,搓揉至拓展狀 (重要)
Incorporate butter and knead till window pane stage (important)
3) 麵團分割成3等份,用擀麵棒擀平,捲起後放入抹了油的吐司烤盤
Divide dough into 3 portions, then roll out flat. Swiss roll, and place into greased loaf pan
4) 發酵至9分滿 (約1小時)
Rise till dough reaches 90% of height of pan (approximate 1 hour)
5) 放入預熱烤箱,170deg 45~50分鐘。如果麵包上色快,蓋上錫紙
Bake in preheated oven of 170 deg for 45~50 mins. Tenting bread with foil if it browns too quickly
